Basic Pound Cake with Lemon Glaze

This pound cake has a hit of tanginess and sweetness in the glaze and balances out quite well with the rest of the cake. I made this when I had a lot of lemons and had the “ I don’t know what to do with all them” moment. I think I ended up making a lot of lemony treats that week, but it was definitely a nice switch from just having chocolate treats at home.
If you’re after a light treat for the week then you might want to try this one out!

Serves 8
250g unsalted butter, softened
250g caster sugar
250g plain flour
1 tsp vanilla extract
4 eggs, lightly beaten
3 tbsp milk
Preheat oven to 180°c and grease a 20cm round cake tin
Combine butter, sugar and vanilla for about 7-8 minutes until it’s pale
Reduce the speed and slowly add the egg mixture into the mixer followed by an occasional spoonful of flour
Add the remaining flour and fold the mixture over onto itself. Fold in the milk
Pour the batter into the tin and bake for 50-60 minutes
Cool in the tin for 10 minutes before putting the glaze on it
Lemon Glaze
250g icing sugar
2 tbsps lemon juice, freshly squeezed
Sift the icing sugar into a bowl
Add the juice and mix until all is combined and spread over the cake
*Add extra lemon juice if you prefer
