Chocolate Fudge Cupcakes

These cupcakes are really rich. Even though the frosting doesn’t look like a lot it is really rich and for all dark chocolate lovers this would be a hit. There is also melted chocolate inside the actual cupcake batter. Very delicious nonetheless! Also just to mention in case you freak out about why the batter is so thick (like I did), there’s not that much liquid in it so it’ll end up more dense.

Recipe adapted from David Herbert’s Best Ever Baking Recipes
Makes 24 cupcakes
100g unsalted butter, softened
2 large eggs, lightly beaten
250g caster sugar
100g dark chocolate, melted
280g plain flour
1 tsp bicarbonate of soda
2 tbsp cocoa powder
250ml buttermilk
Preheat the oven to 180°c and line your cupcake trays
Combine butter, eggs, sugar and melted chocolate in a large bowl.
Sift flour, bicarbonate of soda and cocoa into the mix.
Pour buttermilk into the mixture and beat for 1-2 minutes.
Spoon the batter into the trays and bake for 18-20 minutes.

Chocolate Ganache
100g unsalted butter
250g dark chocolate, coarsely chopped
Because I got a little lazy I decided to do this in the microwave. Put the butter and the chopped chocolates into a bowl and heat it up in intervals of 15-20 seconds and stir each time. Do this until combined.
Drizzle or put a spoonful of the ganache on top of the cupcakes!
