Frosting: Cookie Crumble Buttercream



Makes enough frosting for about 12 standard cupcakes

110g butter, softened

½ cup powdered sugar

¼ cup cocoa powder

1 tsp vanilla extract

2 tbsp milk or heavy cream

12 chocolate chip cookies, crumbled (I used chips ahoy)

extra chocolate chip cookies to decorate


Cream the butter for a few minutes


Sift the sugar, cocoa and cookie crumbs into the bowl and mix on the lowest speed until the sugar and butter are combined.


Increase the speed and add vanilla and milk. Beat for another 3 minutes.


Use a piping bag or spread on top of the cupcakes as you like!



I did a couple of different toppings on them. All of these were done using a flat knife. If you want you can always cut up a piece of the cookie and use it as a topper or put crumbs on it.
