Funfetti Cupcakes

I’ve always wanted to make one of these funfetti cupcakes before and I finally got around to doing it today. I wasn’t feeling too happy before baking but once I got the sprinkles out it definitely cheered me up (except for the fact that the sprinkles are everywhere as well). These cupcakes have a different vanilla base to the ones I’ve used in the past but they are really good! I think these would be perfect to make if you have a kid’s party, or even if you just want to have some for a girl’s night in!
Also if you haven’t noticed, I tend to not have a heaped amount of frosting on all of my cupcakes and I reduce the amount of sugars of recipes that I have used for them. I love cupcakes and frosting but I don’t think it’s necessary to go overboard with the amount of frosting on top, but this is just personal choice! You should always taste your mixtures every now and then to see if you need to add more ingredients. Other than that I think you should go make these now and hopefully the sprinkles will cheer your day up a bit more like mine!

Recipe adapted from howsweetitis
½ cup unsalted butter, softened / 113g
½ cup caster sugar / 115g
2 eggs
1 tbsp vanilla extract
1 ½ cups plain flour, sifted / 170g
1 tsp baking powder
1/3 cup milk / 80ml
¼ cup sprinkles /55g
Preheat the oven to 180°c and line your tins
Cream the butter and sugar for about 3 minutes
Add eggs one by one and vanilla and beat
Combine plain flour and baking powder together and add half into the mixture
Add milk, keep mixing and then add remaining dry ingredients
Fold in sprinkles (don’t agitate it too much or else the colours will start fading into the batter.)
Scoop the batter evenly into each cupcake tin
Bake for about 18-20 minutes
Cool the cupcakes on a wire rack, and then start on your frosting!

1 1/8 cup icing sugar / 250g
heaped ¼ cup unsalted butter, softened / 80g
1 tbsp milk
1 tbsp vanilla extract
Combine icing sugar and butter together and beat till its mixed
Add milk and vanilla extract and mix for a further minute
Your cupcakes are now ready to frost! Put some more sprinkles on and enjoy them!
