Melting Moments with a Lemon Buttercream Filling
My first attempt at making something other than chocolate! I’ve seen it a couple of times on Master Chef and saw images of it but never actually knew how they tasted so I decided to give it a shot. Turns out its easier than it looks! It takes about 10 minutes to put it together and if you want something to have your tea or coffee with then this goes quite well with them.
Makes about 13-14
About 26 individual biscuits
¼ cup icing sugar
¾ cup plain flour
1/3 cup corn flour
1 tsp vanilla extract
Preheat the oven to 180c and line two trays with baking paper.
Beat butter, sugar and vanilla extract until pale or for about 2-3 minutes on medium speed.
Add flour and corn flour then stir with a wooden spoon until the mixture turns into a dough-like mixture.
Roughly roll a teaspoon worth of the mixture onto your hands into a ball, repeat till you get about 26 balls.
Using a fork gently press down on each of the balls (make sure they’re not too thin).
Bake for 12 minutes in the oven
Let it cool on a rack before putting the frosting.
for the lemon buttercream
50g softened butter
2/3 icing sugar
2 tsp lemon rind
1 tbsp lemon juice
Combine all the ingredients into a bowl and mix for 5-6 minutes.
I piped mine onto the biscuits with a bag but you can put a dollop on if you’d like.
Sift icing sugar onto it as well before serving, and enjoy!
